 Falafel(Native call it Taamia)
Ingredients:
1 cup dried chickpeas (you can use Ground beans as you like)
- 1 large chopped onion.
- 2 cloves of chopped Garlic.
- 3 tablespoon of chopped parsley.
- 1 teaspoon coriander,the same with cumin and a little of chilli pepper
- 1/2 teaspoon of baking powder
- Salt as you like it, but less is more healthy
- plenty of oil for frying
Optional
- Sesame seed
Preparation;
Soak the chickpeas (ground beans)in water overnight,omit this step if you use canned chickpeas.
Drain the chickpeas of water and put it in fresh water for ten minutes or so,Put the Chickpeas or (ground beans) in a mixer,or for better result hand mash the Chickpeas with the rest of the ingredients in a bowl to get the right mixture,then form the mixture into small balls the size of an egg,then make all your mixture into balls,place it into boiling hot oil in frying pan (be careful from splashes of hot oil on your face),fry between 5-9 minutes until get to the Golden Brown in colour.
Serving:
Serve hot preferable or cold,serve with Pita bread (nan Bread ),Tahina (Hummus),Salad,Pickles,also you can make the FALAFEL big as the Size of Burger to make more presentable on the dish beside the Salad.

 Tajeen Lahma(Casserole)
Ingredients;
- 1/2 k.g of meat
- 1 large chopped onion.
- 1 tablespoon of Sunflower Oil
- 2 peeled potatoes and cut into slices (circles)
- 2 large chopped tomatoes or 100ml tomato canned
- 100 g. of french green beans
Preparation
Cut the meat into Cubes,put the chopped Potatoes,onions,Carrots,French beans,chopped tomatoes and the spice of your choice together into Casserole stir in the Sunflower Oil,then put in the middle of pre-heated Oven from 1.1/2-2 hours Gas mark 5.
Best Way to Serve
Serve Hot with Rice and Pitta bread,very healthy and fresh Dish not costly.

Egyptian Golden Rice
Ingredients :
- 150g of Jasmine Rice or any Rice you like
- A cube of Vegetarian OXO
- 2 pints of water
- 1 teaspoon of salt
- 1 tablespoon of Oil
- 1 teaspoon of Pilau Rice Seasoning
Preparation :
Put half of the Rice in the Pre-heated Sauce pan with the Oil,Stir regularly with a spoon until you get the Gold or Brownish colour for the Rice,then Add the rest of the Rice and Continue stiring the rice for 2 minutes then add the OXO, Pailu Rice and the Salt,Slowly but surely put the water in after you lower the Gas down,until the water reach 2 C.m on the top of the Rice. Give it a good Stir and Cover it,after 10-15 minutes on mid heat gas degree,check will be ready.
Best way to Serve
The best way to serve and eat, with Mixed Egyptian Vegetables,Fish (smoked Haddock,Cod,Tuna,Shish Kabab,any type of meat or fish,very ecnomic dish.

 Shish Kebab
Ingredients
- 2 pounds of tender meat (lamb)
- 1/2 cup of sunflower oil
- 7 clove of Crushed Garlic
- 1 teaspoon of mixed spices
- 1/4 of teaspoon of black pepper
- 6-7 small egg size onions,peeled and cut into slices
- 2-3 green or yellow peppers,cut into thicker pieces
- 1 teaspoon of salt
Preparation :
Cut the Lamb into inch cubes,in a bowl combine the meat with the rest of the Ingredients,Sun flower oil,Garlic,spices,salt,put in the Fridge from 2-3 hours. Remove after 1 hour or so prior to cooking. Thread alternately the meat,the green pepper on the Skewers or the Stick,with Onion slices. Cook on hot Grill. Turn round occasionally adding the mixture of Garlic.When you get the level of exceptable cooking for you take it off the Grill or the Barbeque.
Serving the Dish;
Best way to serve with Tahina,Salad and Pitta Bread.

Arabic Red Lentils
Ingredients
- 200 G of Red Lentils
- 1/2 Chopped Onion (if you do not like Onion or Garlic you can omit this choice)
- 2 chopped Medium Tomatoes
- 1 Vegetarian OXO
- 1 tablespoon of Oil
- 1 teaspoon of Mix Spieces
- 1 teaspoon of Salt
Optional
- Carrots or Coriander
Preparation
Wash the Red Lentils and leave to stand, Put the Sauce pan on the Cooker on medium heat,add some oil put the Chopped 1/2 onion on and stir until you get the yellowish color of the onion then add the tomato,stir add a little water,then add the crushed Veg OXO,salt,spices and stir thoroughly,then add the Lentils and the rest of water, let boil for about 20-25 minutes and from time to time give a stir.
Very good and healthy dish fo winter and the people seeking to loose weight
Serving
The best way to serve is hot with Pita Bread / Crusty Rolls or as a Starter,an if you are not Vegetarian you can add Chicken / Meat Stock to it very delicious.

Mediterrranean Mixed Vegetables
Ingredients
- 2 Carrots
- 1 Chopped Onion
- 2 chopped Medium Tomatoes
- 1/2 sweet Potatoe
- 4-5 Asparagus tips
- 2 Peeled Potatoes
- 1 Vegetarian OXO
- 1 tablespoon of Oil
- 1 teaspoon of Salt
- 1 teaspoon of Mix Spices
Preparation
Start with washing all the Vegetables.cut off the ends,put the oil in sauce pan,put in all the ingredients;chopped Onion,Tomatoes,Potatoes,cut the Asparagus into 2inch pieces,put the Salt and Spices,then put cup of water on the Vegetables,add OXO put in the Oven for about 1.5-2 hours.
Serving
Best way served hot with pitta bread,Rice,Meat.

Vegetarian Sausages with Spaghetti
- Packet of Vegetarian Sausages
- Tomatoe Sauce with Herb
- Tablespoon of Oil
- 1 teaspoon Of Salt
Optional
- 1/2 chopped Onion
Preparation
Cut the sausages into slices and fry them in frying pan for 5-7 minutes,add the tomatoe Sauce and stir,then add the Salt and spices,leave it on low gas. Next get the Spaghetti ready,put about 2 litre of water boiling in the Sauce pan,add about 50 G of Spaghetti to the boiling water,old generation say put some oil with the spaghetti to not allow it to get sticky,but you can overcome this by draining the Spaghetti and then poure hot water over while draining the Spaghetti,dish the Spaghetti on plate and add the Cooked sausages on the top.
Serving
Best Served hot with adding Parmesan Cheese on the top.

Mediterranean Koufta
Ingredients
- 2 pound of lamb (shoulder or leg)
- 2 Chopped Onions
- 8 cloves of crushed Garlic
- 300g of Rice
- Sprig of Parsley
- Ground cinnamon
- 4 eggs
- 1/2 cup flour
- 2 teaspoon of Cumin
- Baking powder
- 2 teaspoon of Salt
- 1/2 cup of oil
Preparation
Rinse the rice and add to the meat with parsley,onion, cumin,garlic,salt. Mix thoroughly. Take a small piece of the mixture and roll into a ball between wet palms; place in pan. Continue until all the mixture is used. Pour half a cup of warm water over the koftas, cover the pan and cook over low heat until rice is a soft texture. Remove from heat and leave it aside to cool down. Meanwhile mix the eggs with flour, baking powder. Mix to a batter. Heat the oil in the frying pan,dip the koftas in the batter (eggs and flour mixture),place in hot oil and fry until golden brown.
Serving
Best served hot with mixed vegetables or potatoe chips.

Egyptian Koshari
Ingredients :
- 1 Cup of Ads aswed (brown lentils)
- 1 Cup of Water
- 1 large Onion (sliced into circles)
- 1 teaspoon of salt
- 1 1/2 Cup of sunflower/Olive Oil
- 140g of small cut Macaroni noodles
- 1 cup Tomato puree
- 1 Garlic Clove (chopped finely)
Preparation :
Place lentils in a sieve and wash well under running
water. Place in a large sauce pan/pot and add 3 1/2 cups of water and
1 teaspoon of salt. Bring the contents to the boil, then simmer/low heat for 1
hour until tender but still intact (not mushy). Drain the water and cover, keep
aside.
Clean the same pot and add 4 cups of water. Bring to the
boil, add 2 teaspoons of salt and the macaroni. Stir
constantly until water returns to the boil and cook,
uncovered, for 15-20 minutes until tender. Stir
occasionally. Drain and keep aside. Clean pot again
and dry.
Wash rice well in sieve under running water and drain.
Heat oil in pot and fry rice over medium heat for 2-3
minutes. Add 2 cups of water and 1 teaspoon of salt,
bring to the boil, stirring occasionally. Cover and
simmer over low heat for 15 minutes or until tender.
Leave covered off the heat for 5 minutes for grains to
separate.
Prepare the ta'leya/Ta'hwiga, add tomato
puree and bring to the boil.
Add lentils and macaroni to cooked rice and toss
together lightly with a fork. Pour hot ta'leya and
tomato mixture on top, toss again and cover pot.
Leave over low heat for 10 minutes. Serve hot.
Now it is time for preparing the ( Taa'Leya (why it is called Ta'leya (topping), because you put the contents on the top of the rice, macaroni and lentils it gives it a nice taste)/Ta'hwiga( spicing and give taste to)): Half a peeled onion lengthwise then slice
thinly to give semi-circle layers. Heat olive oil in a pan,
add onion and fry over medium heat until golden
brown. Add garlic and cook a minute longer.
Best way to Serve
The best way to serve and eat,hot!.

Ingredients
